This is a lovely sweet bread, very similar to the King's Bakery brand. There are some similar recipes in the Zaar database, but no exact matches so I am posting this. Cooking time will depend on your machine,
I added salt as others had suggested. I did not have the gluten and omitted it. I think the pineapple and coconut flavours are competing with each other in this bread. Next time I'll leave out the coconut. It was a great bread though, rose nicely, nice and moist.

Really tasty! Making this loaf was quite the adventure. My electricity went out just before the loaf started baking, so I pulled it out to rise in a loafpan, loaded the kids and bread dough in the car to go bake elsewhere. On the way, one child stuck his hand into the dough, apparently pretty far, pushing the plastic wrap deep into the pan. I almost tossed it then, but have been wanting to try this recipe for sometime so continued on my quest to get it baked. Finally found an oven. The result was delicious and beautiful. It must be a very forgiving recipe! I made as directed with gluten and will add a bit of salt next time or serve with salted butter. Really wonderful despite my misadventure. Thanks, Judy!
