Here is an easy rice side dish.

  • 1 14 cups rice
  • 2 12 cups chicken stock
  • 34 cup diced canned pineapple
  • 1 cup ham, diced
  • 3 tablespoons butter
  • 14 cup slivered almonds
  • salt and pepper


  1. Cook rice in chicken stock until stock is absorbed. Brown pineapple and ham in butter in 1 1/2 quart casserole. Stir in rice and season, to taste, with salt and pepper.
  2. Add almonds, stir well and bake for 15 minutes at 350 degree oven.

Oh this was so good, I added in some whole garlic cloves to the water and did a few amount adjustments, this was really enjoyed thank you Char!

I made this to go with hawaiian chicken so I did omit the ham. I also added minced carrot and red pepper and sliced almonds (that's all I had on hand). Great side dish. Thanks so much!

Really yummy rice, I loved it. I served it with a sweet hawaiian rib recipe and sauteed greenbeans. I could easily eat this all the time.
