Here is an easy rice side dish.
- 1 1⁄4 cups rice
- 2 1⁄2 cups chicken stock
- 3⁄4 cup diced canned pineapple
- 1 cup ham, diced
- 3 tablespoons butter
- 1⁄4 cup slivered almonds
- salt and pepper
- Cook rice in chicken stock until stock is absorbed. Brown pineapple and ham in butter in 1 1/2 quart casserole. Stir in rice and season, to taste, with salt and pepper.
- Add almonds, stir well and bake for 15 minutes at 350 degree oven.
Oh this was so good, I added in some whole garlic cloves to the water and did a few amount adjustments, this was really enjoyed thank you Char!
I made this to go with hawaiian chicken so I did omit the ham. I also added minced carrot and red pepper and sliced almonds (that's all I had on hand). Great side dish. Thanks so much!
Really yummy rice, I loved it. I served it with a sweet hawaiian rib recipe and sauteed greenbeans. I could easily eat this all the time.
