I am not sure what to call this because this is something I pulled out of my, well you know... I thought I had a solid pork tenderloin but it was 6 2x10" strips in a vacuumed sealed package. I cut it into chunks and proceeded from there. I tried to locate a recipe that would be good, but in the end I threw caution to the wind and created this. It turned out excellent! We are anticipating the leftovers tomorrow because all of the flavors will be set in.

  1. Grab out a large baking dish.
  2. Cut pork into chunks, about 1-2 inch.
  3. Put pork in dish.
  4. Chop peppers, onions, celery, mince garlic, salt and pepper and stir around contents.
  5. Add rice over mixture evenly and stir around to mix.
  6. Open pineapple and pour juice and chunks over mixture.
  7. Add vinegar, soy sauce and Worcestershire.
  8. Add cornstarch throughout and stir.
  9. Sprinkle brown sugar evenly over mix; salt and pepper a little extra if desired.
  10. Pour water over the dish.
  11. Cover with foil and bake at 350°F for 1 hour.
  12. Uncover, stir, and return to oven an extra ten minutes.
  13. Remove from oven and let set for 10 minutes or more stir and enjoy!
