  • Beat flour, sugar, soda, eggs, pineapple, oil, salt and vanilla togther 3 minutes.
  • Pour into 9x13 pan.
  • DO NOT GREASE OR FLOUR PAN.
  • Bake 35 minutes in 350 degree oven.
  • Meanwhile bring the evaporated milk, sugar, butter and vanilla to a boil.
  • Add pecans and coconut.
  • Cook an additional 2 minutes.
  • Pour over cake when remove from oven.
  • Serve with Cool Whip or ice cream.

I first had this about 8 years ago from a coworker, she moved and I lost the recipe :( Only change, I used a tub of cream chesse frosting (what I had on hand and was in a pinch), turned out beautifully! Thanks for posting this recipe! It is a very moist and sweet cake! Love it!
