      Process pineapple and sugar in blender until very smooth.

      Combine water and lemon juice.

      Strain pineapple puree. (optional).

      Mix all and chill.

      Sunshine in a glass! Tart and refreshing, I know we will really enjoy this during the summer months. I think this would also be great with a smidge of vodka or rum, for the adults! YUM! I did not strain the pineapple, and buzzed in the blender also, which worked out just fine. This would also be great for the kids! Thanks for sharing, Elainemay. Made for Best of 2010 tag game!

      Awesome!!! The boys loved this refreshing drink! They like things a bit tart and this fit the bill. I used fresh pineapple and fresh squeezed lemon juice - I needed 4 lemons. SO good! I didn't bother straining the puree and just blitzed everything in the blender. I will make this again for sure! Made for Went to the Market tag. Thanks Elaniemay! :)
