Hawaiian Island Drive-In Style Macaroni / Potato Salad

"1 Scoop of this salad, 2 scoops of cooked rice, your favorite island style meat, add a little humidity and some authentic Hawaiian music and you just might feel like you are there. I created this salad and thought it tasted like the real deal. Let me know what you think."

  • Cook pasta, eggs, potatoes individually and let cool.
  • Add all of the above ingredients in very large pot/bowl and toss together.
  • Cover and referidgerate overnight to let the flavors meld together.
  • Enjoy.

  1. This is simple, but so good. I usually don't use celery salt in my salad if I use celery, but even though the seasonings are simple it is really good. I used to get the spaghetti noodle salad from Shiro's. I haven't had it in awhile. You do have to use Best Foods in the Islands. I am surprised you don't have pickle relish or vinegar in the recipe. Salting the pasta water and rinsing the pasta in cold water after cooking is also a must. Otherwise the pasta itself will taste bland. I find a pure mayo dressing to be a little stiff. So I do half mayo and half sour cream plus 1/4 cup milk to make a creamier dressing. It is better the next day after the flavors have a chance to marry. I store the salad in a zip lock bag with the air pressed out of the bag. It helps to keep the top of the salad from drying out. I have been trying to find a simple salad that tastes good. I usually have to add a lot of stuff to mine to boost the color and the flavor, but I have always liked the good take out simple potato mac salad the best. I just could never achieve that until now.
     
  2. this is a very addictive potato salad! i have made it a couple of times now, pretty much as written, except for the addition of some lemon pepper. we had an "east coast luau" on the 4th, with this salad to accompany some hawaiian style baby backs. i only make a half recipe, as this makes a huge quantity. would be great for a party!
     
  3. This was really good. It had a very different texture but a very suprisingly great taste! I felt like I was back home!
