I make this ahead and just keep the whole platter in the fridge until guests arrive.

Yummy and healthy snack. I used greek yoghurt that I flavoured with a little honey and vanilla.

  1. In small bowl, mix yogurt, rum extract and 3 tablespoons of the coconut and pineapple.
  2. Stir and serve or cover and store in refrigerator until serving time.
  3. Sprinkle dip with remaining 1 tablespoon toasted coconut.
  4. To serve, arrange fruit on a platter with dip in the middle.
