Hawaiian Coleslaw

"I love to serve this unusual and sweet coleslaw in fresh pineapple halves for individual servings at a dinner party. It's also a hit at a large gathering just put in a big bowl and garnished with greens."

  1. Made this for a family Christmas get together and really enjoyed it. Left out the coconut and used 2 bags of the shredded cabbage and carrot mix. Great taste. Different twist on the normal coleslaw. Would make again.
     
  2. I just used the packaged slaw mix with shredded carrots already in them. I also used half yogurt/half mayo. This was quite different, I loved it! I can see this being a great bringalong.
     
  3. This was a nice coleslaw, but had a little too much mayo for me. I will make it again, but maybe with 3/4 cups of mayo. Thanks!
     
  4. Just made for a luau. Love the sweetness & flexibility. I arranges the salad with decorative Mandarin oranges and pink cherries for the rising sun effect.
     
  5. I have made this before and just love it! Taking it to a poolside family reunion tomorrow!

Tweaks

  1. This is a nice change from the usual coleslaw. I did not add the raisins as I had none but it was still good. I did use the fresh pineapple. Also used cashews instead of macadamia as I have a severe allergy to them. It was still good. Will make this again.

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
