Hawaiian Beef Casserole

"My mom, now deceased, was known for her awesome cooking. This is one of her recipes that I make on occasion. It is very easy to prepare and goes good served over steamed rice. The ground beef can also be substituted with ground chicken."

  • Cook meat with onions& mushrooms.
  • Drain in collander.
  • Combine remainder of ingredients and add to meat mixture.
  • Simmer about 25- 30 minutes.
  • Serve over rice.

  1. This is a nice recipe although it is a bit bland. I did add salt and pepper to the meat mixture as it browned. My husband and son really liked it. I used crushed tomatoes instead of ketchup as I didn't have any on hand. I decreased the brown sugar a bit at the suggestion of the other reviewers. I wish I had decreased it to 1/4 cup. I don't think the corn starch was necessary and I ended up adding an extra cup of water (maybe because of the tomatoes). I do have to say that the more I ate the more I liked it. I often add crushed pineapple to my big pot of chili so we knew we would like the flavour with the meat. My husband thought it would be great on spaghetti so we will try that tomorrow with the leftovers. Thanks for a tasty and versatile meal.
     
  2. This was very tasty! My kids liked it too. I used 1/2 lb ground sirloin and 1/2 lb ground turkey breast, and cut the brown sugar to 1/4 cup. It was still very sweet. It was unclear whether or not to use the juice from the pineapple. I had pineapple in unsweetened juice so I used most of it. It was also unclear whether to cover it or not while simmering it, so I covered it. We ate it over brown rice and my family of four didn't even eat half the recipe, so I'd say four servings is a bit conservative. Thanks for a great recipe!
     
  3. I really liked this recipe. I used ground turkey. My husband thought it was a bit sweet, so I think I would use 1/4 cup brown sugar instead. I would make it again.
