BROWNIES
- 1 Hass avocado, peeled and diced
- 0.25 ml salt
- 177.44 ml packed brown sugar
- 4.92 ml vanilla
- 14.79 ml balsamic vinegar
- 99.22 g bittersweet chocolate, melted
- 177.44 ml whole wheat pastry flour
- 59.14 ml glutinous-rice flour or 59.14 ml sweet rice flour
- 14.79 ml unsweetened cocoa powder
- 118.29 ml coconut milk
- 59.14 ml tart cherry juice concentrate
- 44.37 ml water
- 29.58 ml dried cherries, soaked in Kirsch and drained

FROSTING
- 1 Hass avocado, peeled and diced
- 14.79 ml agave nectar
- 29.58 ml powdered sugar
- 44.37 ml unsweetened cocoa powder
- 14.79 ml coconut milk
- 29.58 ml shredded coconut
directions
- Preheat oven to 350F, line and grease grease a 9" square pan.
- In a large bowl beat together avocado pulp, salt, brown sugar, vanilla and vinegar.
- Stir in melted chocolate until well combined.
- Add flours and cocoa powder, stirring gently, then add coconut milk, cherry concentrate and water and mix well.
- Fold in dried cherries.
- Bake 20 minutes.
- Cool completely in the pan, then chill overnight before frosting.

Frosting:
- Combine avocado, agave, sugar, cocoa and coconut milk in a food processor and whip until smooth.
- Spread on chilled brownies and sprinkle with coconut.
- Chill completely before cutting.
