  • MIX hash browns with half the cheddar cheese in a 9 x 13 inch baking dish.
  • LAYER with the remaining cooked beef, corn, green onions and salsa; Top with remaining cheese.
  • BAKE at 400F for 30 minutes.

  1. This was an ~okay~ recipe. I like the idea of using hashbrowns but the dish was just not very flavorful, even with the Cilantro Salsa that I used.
     
  2. Wow, I tried this recipe because it looked SOO easy and thought I would spice it up a bit and found that I really did not need to. I used Sharp cheddar cheese, added a little garlic powder to the hamburger and used Medium Salsa (ie - mild, medium and hot salsa). It was quick and really good! Thanks Charlene!!
     
  3. This was just an okay dish. If not for all the seasoning I put on the meat, it would have been very, very bland. Even then, it still seemed to be missing more flavor. I'd say sprinkle the hashbrown/cheese mixture with seasonings before putting in pan as well.
     
  4. Mmmm! This was really good, particularly on a bitter cold night here in Virginia. I upped the amounts because I had slightly more ground beef, but it all still fit into the 9x13 dish. I infused the ground beef with lots of flavor: salt, red pepper flakes, Italian seasoning and thyme, along with a chopped red onion while browning. It would have been stupendous if the hash browns had gotten crispy on the bottom, but they didn't. I oiled the dish in hopes that they would. Still and all, this made for tasty eating for teens, kids and adults alike! Thanks for posting a great dinner recipe.
     
  5. Really easy to make and very tasty. I also added a little garlic powder to the meat & used medium salsa. Will be making this dish again. Really good for a weeknight dinner.
