- 4 medium potatoes, peeled
- 3 slices bacon, diced
- butter or oil (for frying)
- 1 onion, sliced
- 1 tablespoon chopped fresh oregano
directions
- Parboil potatoes (or microwave on HIGH for 5 minutes). Cut into medium thick slices. Fry bacon until fat is transparent. Add butter and fry onion and potato with bacon, turning until browned. Sprinkle with oregano. Serves 6.
