Delicious recipe. Made it twice already and it was a big hit with my family. I added some eggplant, tomatoes and onions to the zucchini base. Used regular rice (took just a little more time cooking)and I once used sour cream because I did not have any cottage left and it was delicious as well! This will become a regular meal in our family, thanks for sharing!

We really loved this casserole. The best part was how great the zucchini tasted mixed with the ground beef and cottage cheese. YUM. I love zucchini and this meal-in-one recipe is a delicious way to have it. I made one mistake, though; I thought the rice was supposed to be made before adding it to the recipe, so I cooked it beforehand. When the baked casserole was cut, however, there was a lot of extra liquid. I realized I should have put in uncooked rice to soak up all the great zucchini juices. I strained out the extra liquid, however, and the casserole was a real winner. The three of us finished all of the casserole (meant to serve 8). Thanks for this terrific casserole recipe, Lavender Lynn. Your friend, Alma, is indeed a good cook!

Yummy, easy - what more could one ask for? I used regular rice, added a little water and let it simmer with the ground beef for about 5 minutes before putting the casserole together. Also threw in some cherry tomatoes just because! made for CCQ Culinary Quest

I made this dish and was totally surprised by it. First of all, I didn't realize that I had bought small curd cottage cheese that had "chive" added to it. It tasted just fine. Then during assembly of it, I was afraid it wouldn't have enough moisture to cook the rice. I was wrong. It was lovely. Now the big challenge... will hubby like it?... Whew! He did, very much. Thank you for posting a keeper of a recipe. (I now wish I hadn't used up all my zucchini this year). I will make again. (Made for PRMR)

Nice recipe!!! I didnt initially realise it had ground beef in it, so had to rethink dinner a bit, but this was lovely. I used normal rice and it was fine, and I really liked the cottage cheese. Makes plenty too!! Good recipe, thanks for sharing, Lynn, this recipe was made for I Reccomend tag game

This is almost like a lasagna but without the pasta. It's delicious. The only thing that I'll do differently next time will be to dilute the cream of mushroom soup with a little bit of water. The taste is great. Thanks Lavender Lynn :) Made for I Recommend tag game

My best friend, who has since passed away, made her zucchini casserole almost identically! I was happy to have found this recipe, as I lost the one she gave me years ago. Thank you for posting this delicious recipe, LL!

Wonderful way to use zucchini! It reminds me a little of a lasagna that uses zucchini for noodles, but without the tomato sauce! Really liked the cottage cheese in this....made it nice and creamy. Thanks for sharing!
