  1. In a saucepan, sauté the carrot, onion and peppers in oil for 5 minutes or until crisp-tender.
  2. Add apple, sauté for 2 minutes.
  3. Stir in water, apple juice, lemon juice, brown sugar and salt, bring to a boil.
  4. Stir in the rice, raisins and cinnamon.
  5. Reduce heat, cover and simmer for 15 or 20 minutes until rice is tender and liquid is absorbed.
  6. Sprinkle with sunflower kernels.
