  1. Add the first 11 ingredients into stock pot over medium high heat.
  2. Bring to a boil and reduce to simmer. Simmer for 30 minutes and remove from heat.
  3. Allow to cool for 15 minutes. Puree soup in blender and return to pot. Finish with milk.

Beautiful and healthy soup, great comfort food. I made this as per recipe and topped with a little dollop of pesto then served with a crusty cob loaf. Just delicious on a freezing winter's night. Made for Everyday is a Holiday.
