Harvest Pumpkin Apple Bread

"All the flavors of Autumn combined into one scrumptious bread. This tastes great with coffee or tea! I make this using Egg Beaters and unsweetened applesauce in place of half the oil to make it healthier. Prep time includes cooling time."

  • Preheat oven to 350 degrees.
  • Grease and flour two 9 x 5-inch loaf pans.
  • Combine flour, cinnamon, baking soda and salt in large bowl.
  • Combine sugar, pumpkin, eggs, vegetable oil and apple juice in large mixer bowl; beat until just blended.
  • Add pumpkin mixture to flour mixture; stir just until moistened.
  • Fold in apples.
  • Spoon batter into prepared loaf pans.
  • Bake for 65 to 70 minutes or until wooden pick inserted in center comes out clean.
  • Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.
  • To make using three 8 X 4-inch loaf pans: Prepare as above and bake for 60 to 65 minutes.
  • To make using five or six 5 X 3-inch mini-loaf pans: Prepare as above and bake for 55 to 60 minutes.

  1. Did anyone else have an issue with the baking time? After 65 mins at 350* my 2 loaves were still uncooked in the center. Followed recipe exact. Right now am baking 10 more mins in hopes they come out right. I hate to waste the ingredients and my time. I M not in a high elevation are or anything weird. My oven usually is accurate within 2 mins of suggested bake times.

  1. YUM! Used 2 cups sugar (not 3), subbed 1 cup sweetened applesauce for the oil, subbed in 1 cup whole wheat flour for one of the white, added in walnuts and oatmeal.<br/><br/>Easy and delicious. It stays moist for days! I made muffins instead and it took about 30 mins to bake.
     
  2. Awesome! Even with cutting the sugar back to 2 cups and only using 1/2 cup oil and half whole wheat flour for the flour, this turns out great. Let it cool first to get the best flavor. It's not as flavorful right out of the oven. I do put in a little more apple. I got 5 mini loaves and another regular size loaf out of one batch. This freezes well. Thanks for sharing!
     
  3. This is wicked good. I used 1 1/2c brown sugar and 1 1/2c white sugar, added a dash of nutmeg and ginger, and used apple cider instead of juice. I grated 3 small macoun apples instead of chopping them. Grating the apples gave me a good mix of juice, shreds, and mush so I was able to cut down a bit on the oil and cider. I'm on my second piece of this bread and am entertaining the idea of getting another. I'm definitely saving this recipe for future use, thanks very much for sharing it.
     
  4. I have to admit, I did not make this bread or try it. But I passed this one on to a co-worker who was looking for a bread to take to a Thanksgiving dinner. She made it and reported back to me with rave reviews. I can't wait to make it myself!
     
  5. I used two cups sugar (1 cup white, 1 cup brown sugar), 1/2 oil and half applesauce, grated my apples (used two), and added pumpkin pie spice to the batter.

Tweaks

  1. I put olive oil instead of vegetable oil and it gave an extra zing to it.
     
  2. Read and used other peoples advice, decreased sugar to 1 cup white and 1 cup brown. Used 1 1/2 cup of white whole wheat flour. Subbed 1/2 of oil for applesauce. Used 2 green apples instead of 1 and subbed cinnamon for pumpkin spice. I added walnuts about 3/4 of a cup and about 1/2 cup of dark chocolate.
     
  3. I made this today with some fresh pumpkin I got from two cooked down sugar pumpkins. I made the following substitutions:<br/><br/>--cooked down some pears and replaced all but 1/4 cup of oil with that.<br/>--Used chopped pear and apple both, not just apple (I had pears, I don't like them raw, but I LOVE them in baked goods)<br/>--For sugar did 1 2/3 cup sugar, 1/3 cup brown sugar, and 1 cup granulated splenda<br/><br/>It turned out awesome! I got 18 muffins and one small loaf. So delicious!
     
  4. This bread was so yummy! I also cut the sugar to 2 cups, used applesauce in place of oil and used half wheat flour, half normal flour. It came out really well. Next time I am going to up the spices a little bit and maybe add more pumpkin.
     
  5. This bread is very good. I omitted the cinnamon and substituted an equivalent amount of a combination fo nutmeg, ginger, and cloves. I used substituted unsweetened applesauce for the oil and 1 whole egg 3 egg whites for the eggs. I used 2 1/2 cups of sugar. Thanks for a great recipe.
