This recipe is truly superb, and very easy to put together! I made it for my Mom's birthday dinner. I have to admit I was a little nervous about putting instant coffe in an apple pie, but I shouldn't have had any doubts. The texture was perfect and rich, but not overly so. I grated some fresh nutmeg on the middle layer, and on top. I also used a 9-inch pie pan, and 2 Roma apples. It looked beautiful, and tasted wonderful. *thunk* (that was the sound of the recipe going straight to my 'keeper' file). Thanks Bergy! (ps: I also served this with a scoop of vanilla bean ice cream and a PERFECT Ginger Cookie recipe#34219. Talk about heaven)

I'm not much of a pie maker so figured I couldn't mess this up too badly, but it was fantastic! Everyone loved it and I should have made two pies instead of one!
