Really easy way to have hard boiled eggs in a different way. Left over Easter eggs can be used in this way. My mother used to do it and I now do the same for my son's family.

  1. Peel the hard boiled eggs and cut them lengthwise in four.
  2. In a bowl mix the olive oil with the vinegar and the mustard to make the sauce.
  3. Add the pieces of the eggs and sprinkle with salt and pepper.
