This soup is full of flavor, so good to curl up with. Makes a hearty supper with french bread. A cup of small pasta can be added the last 15 minutes of cooking.
- 1 lb hamburger
- 1 cup chopped onion
- 4 cups beef broth
- 2 tablespoons beef bouillon
- 1 cup diced carrot
- 1 1⁄2 cups sliced celery
- 1 cup potato, cubes
- 2 (14 ounce) cans diced tomatoes
- 1 teaspoon thyme
- 1 teaspoon garlic powder
- 1⁄2 teaspoon pepper
- 1⁄2 teaspoon marjoram
- In soup pot, brown hamburger, add onion, saute 2 minutes.
- Add remaining ingredients; bring to a boil.
- Reduce heat and simmer for 45 minutes.
I added a cup of corn at last 10 min. of cooking and also some pasta noodles. Verry tasty. I think maybe some garden peas would be good also.
Very good soup. I did not drain the hamburger after cooking it and even though I used lean ground beef it was still a bit fatty. Next time I wll drain it after cooking it. Otherwise this was an excellent soup. There was enough to freeze for "afters." Thanks MizzNezz
I made this Sunday and it was pretty good. But, I had some for lunch the next day and it was very good! It definitely is much better the next day. I followed recipe exactly, except I substituted ground turkey for the hamburger. Very good! Thank you for the recipe!
