Cheesy Hamburger Soup

  • In lg soup pot, brown beef; add next 4 ingredients.
  • Cook and stir 2 minutes.
  • Add broth, boullion cubes, and tomatoes.
  • Cook and stir 2 minutes.
  • Add italian seasoning, worcestershire sauce, and hot pepper sauce.
  • Bring to a boil; reduce heat and simmer for 15 minutes.
  • In small sauce pan, heat butter, add flour.
  • Cook and stir on med until mixture is beginning to brown.
  • Carefully mix into soup.
  • Cover and simmer for another 15 minutes, stirring occasionally.

  1. II feel bad I can't rate this a 5, but had a problem with the soup. Even though I didn't use the boullion I had to doctor it up because we thought it was too salty. I added 2 diced potatoes to absorb some of the salt and some more canned tomatoes. I also used 3 carrots instead of the 1C, just because we like them. After that, I thought the soup was good so almost didn't make the roux. I'm so glad I did. The soup was so much richer, plus it cut down on the saltiness a bit. I will definitely make this again as written, adding extra carrots and a diced potato, but will use low-sodium beef broth next time. Because the addition of Italian seasoning, worcestershire sauce and hot pepper sauce plus the roux this made this a step above other hamburger soups I've made..
     
  2. Really Good !!!!! Im one who sees a recipe on here and tweek it, but I followed the recipe to the tee, almost. I added some leftover cabbage, quartered some baby bellas, and added a can of shoepeg corn. I also added a cup of cooked rice. But I didnt change the base of the soup any ! It has been rainging here all day and this just hit the spot!
     
  3. MizzNezz this was Delicious! We really enjoyed the broth. I did alter it a bit though to save time, just too busy today...Used browned ground beef that I had saved in the freezer for moments like this, used 2 cans of mixed veggies(drained) and was 1 can short of beef broth so added vegetable broth, I sub'd dehydrated onion for the fresh and added that and pre-minced garlic directly to the soup mixture. Garnished with shredded Parmesan. Great recipe!
     
  4. This is really great soup. I left out the Italian seasoning, worchestshire and pepper sauces but added #166030 taco seasoning for a bit of tex/mex flavor. We had our first frost and this was a big hit with the family. Thanks MizzNezz, another keeper.
     
  5. This was a good soup. I done a few minor changes because I didn't think it would be enough to feed my crew. So I added some whole kernel corn and some dumplings. I omitted the flour. It turned out very nicely. We will be making this again. Thanks MizzNezz for a great dinner.

  1. Very nice soup on a chilly rainy day! I was a little worried about the soup being to salty but it was perfect. Only added a couple dashes of hot pepper sauce but followed the other ingredients exactly. I did use matchstick carrots and ground round instead of ground beef. Next time I might add some small cubed potatoes or maybe a can of kidney beans. Thank you MizzNezz for a great soup recipe!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
