This is a very hearty soup. Easy to make and filling!! My aunt gave it to me a few years ago. It is so good on a cold day.

  1. In soup pot, add water,tomato sauce and beef bouillon. Cook on a low heat until cubes dissolve.
  2. While cubes are dissolving, brown beef, then drain fat from beef.
  3. Add onion, celery.
  4. Bring to a boil.
  5. Add beef, barley, rice, cabbage, potatoes, carrots, thyme.
  6. Cover and simmer for 50 minutes.
  7. Add peas and simmer an additional 5-10 minutes.
  8. Salt and pepper to taste.
  9. Optional: serve with cheese on top (parmesan or mozzarella).
