A good hot meal that will be good in your tummy. My mom cooked it all the time when I was a kid.
- 1 1⁄2 lbs ground beef
- salt and pepper
- 3 medium potatoes, diced
- 2 (18 5/8 ounce) cans Campbell's Ready To Serve minestrone soup (or vegetable)
- Brown the ground beef.
- Season with salt and pepper to taste; drain.
- Add diced potatoes and soup; stir.
- Cook on medium heat until potatoes are fully cooked.
- Stir frequently.
I tried this recipe but only had cream of mushroom soup and it was sooo good. You can even leave out the potatoes and have this on a bun like a burger. My family loves it.
This is a great fast dish. I make it with vegetable soup. Can be done without the potatoes! Good with corn and served with toast. MMMMMM......Good!
Great stuff! Used frozen hashbrowns to save time chopping. Added just a supcon of Frank's RedHot sauce for bite. Thanks, Kim. It was superior.
