I added 1/2 cup long grain rice the last 20 minutes of cooking. A great winter soup.

  1. Lightly brown beef just until red has disappeared.
  2. Skim fat from skillet.
  3. Separately, sauté green pepper, onion, carrot, celery and garlic in oil for about 10 minutes until softened.
  4. Add tomatoes, water, salt, pepper, Italian seasoning and beef.
  5. Simmer 1 hour.
