Ham & Hash Browns Casserole

- 44.37 ml all-purpose flour
- 414.03 ml evaporated skim milk
- 0.25 ml cumin
- 3.69 ml dry mustard
- 177.44 ml sweet corn
- 1.23 ml pepper
- 0.25 ml salt
- 113.39 g light cheddar cheese
- 226.79 g fat free sour cream
- 226.79 g ham, chopped
- 907.18 g frozen hash browns
- 1 whole red bell pepper, chopped
- 1 medium onion, chopped
- pork sausage link
directions
- Combine flour and 1/2 cup milk, stirring until smooth.
- Combine flour mixture, remaining 1 1/4 cups milk, mustard, pepper and salt in a medium saucepan, stirring well.
- Cook over medium heat, stirring constantly until milk mixture is thickened and bubbly.
- Remove from heat; add cheese, stirring until cheese melts.
- Stir in sour cream.
- Combine cheese mixture, ham, corn and hash browns in a large bowl, stirring well.
- Spoon potato mixture into a 13 x 9 x 2 inch baking dish coated with cooking spray.
- Cover and bake at 350 degrees for 30 minutes.
- Uncover and bake 30 to 35 additional minutes or until golden.
- Serve with sausage links.

I live in Las Vegas. I was lucky enough to run into Recipezaar around Nov. 2000 and got hooked quickly. I am a cookbook collector and have been collecting recipes for as long as I can remember. My DH had to build in shelves for all my cookbooks! I like to dabble with OAMC and for a few years hosted the Budget/OAMC forum with some great people over there.
