Had a craving for ham and cheese muffins this week and found this recipe.. I used Tex Mex cheese instead of cheddar, and it gave them a nice bite. Turned out great! The yogurt made them turm out very moist, yet dense enough to eat as breakfast. Great recipe!
BF said I outdid myself with these. I would definately suggest doubling the ham, I did and would add even a bit more next time. I'll also cut back on the sugar a tad. But these went together quickly (I diced the ham and cheese, and mixed the dry ingredients last night. This morning I just threw everything together and into the oven) The mix is very thick but they fluff up nicely and make big, moist muffins. Great "to go" food! Thanks for sharing this!
This was a great recipe! The muffins came out great. There are only a couple of adjustments I would make:<br/><br/>- I would use less sugar - maybe just a couple of tablespoons<br/>- I omitted the basil - they tasted great without it<br/>- I baked them for 15 minutes only
This was a good recipe, but I would make a few modifications. I would use more ham next time (probably 1+ cup). I also used sour cream, instead of yogurt (which turned out good as well). Another modification that I would do is add a little milk (my batter was much too thick as written). The last modification that I would do is sift all the dry ingredients to make the muffins puff up (I sifted mine and they were very fluffy). All said an done, this was a good recipe, but it needed some on-the-spot modifications. Thank you for posting.
These were voted excellent by DH and DD2, who generally doesnt care for savoury muffins. For my part, they were very easy to make, I had everything in my fridge/cupboard, I made them quickly inbetween being busy with other things. I was a bit concerned that there might not be enough liquid, but they were absolutely fine. Will definitely make again, thanks for a great recipe :-)
I really liked these! Made them for breakfast sunday morning. I think next time will decrease the sugar just a bit but served with yellow mustard and will probably make again:) Thanks!
