Ham Breakfast Casserole

  1. Spray 8 X 8 baking dish with cooking spray.
  2. Place 4 slices of bread in prepared baking dish.
  3. Sprinkle ham, mushrooms, and chees over top.
  4. Cover with 4 slices of bread.
  5. In a medium bowl, combine eggs and skim milk.
  6. Add onion flakes, parsley flakes, and lemon pepper.
  7. Mix well to combine.
  8. Evenly pour egg mixture over bread.
  9. Cover and refrigerate for at least 1 hour or overnight.
  10. Uncover and bake at 350 F for 1 hour.
  11. Place baking dish on a wire rack and let set for 5 minutes.
  12. Cut into 4 servings.

Great recipe, Tish. I followed recipe for the most part adding chopped scallion; omitting the lemon pepper & replacing it with italian seasoning. I'm always looking to try something new for breakfast that doesn't require a lot of work when I'm half asleep, I will definitely make this again. So many applications of this recipe it's ridiculous... use whatever you have on hand and it'll be tasty.

We made it this morning- Only allowed the 1hr soak time. The family really enjoyed. Can use almost anything in it you would for an omelet...great recipe. Thanks GaylaJ

This is a fantabulous recipe. We are living the life right now in Prague and within 5 minutes (and $7!!!), I had gathered all the ingredients from the market and bakery downstairs. I used fresh baked bread and I think when using bakery bread (or any bread maybe) that just the bottom layer of bread is enough. My DH usually has a critique or two for my dishes, but this was a hands down "this is GOOD."
