I've seen a couple variations of this one the 'zaar, but this is the way we do it in The Burgh, and it's a classic. They're great for picnics and can be kept warm in a crock pot.

I didn't have chipped ham, it is not available in this area, but I did have some thin slices that I coarsely chopped that I substituted. It took about 15 minutes for my onion to get soft, before I could add the ham. Then I simmered it for about an hour for the flavors to blend. Very, very good...I think this is going to be a keeper.

There aren't stars enough in the heavens for this recipe. I thought I was at Isaly's again, more years ago than I care to count. The perfect exact flavor! I did cheat though. I used ham-off-the-bone from Giant Eagle instead of chipped ham. Talk about gilding the lily!... Thanks for a return to my youth, would that it were always so easy! And pleasant. Thanks from Janet in North Huntingdon. BTW, there is still an Isaly's in Irwin, looks pretty much like they used to, if you are not too young to remember.
