  • In 4-5 quart crock pot, layer ingredients in order: tater tots, ham, onions, green peppers, and cheese.
  • Repeat layers two more times, ending with cheese.
  • In a medium mixing bowl, combine eggs and milk and beat with whisk or egg beater until combined.
  • Season with salt and pepper to taste.
  • Pour mixture over layers in crock pot.
  • Cover crock pot and cook on low for 10-12 hours.

  1. The taste, ingredients, and preperation are simple and do taste very good together. I felt this casserole was a bit dry though. I do plan to try it again with a can of cream of celery soup mixed with the egg and milk. I also love that this is a crockpot recipe. Thank you for posting it.

  4. I made 2 crocks (a 3 qt and a 4 qt)of this for a church breakfast potluck and everybody loved it! I didn't even get to try it. I only made two layers instead of three. To each crock, I added two extra eggs, 1/4 cup extra milk, and a can of cream of potato soup. One crock was seasoned with Mrs. Dash "Southwest Chipolte" and the other with "Table Blend." It cooked on low for 9 hours, then spent another hour on warm before the meal began. We took both salsa and ketchup for people to use. Thanks Mary for the great recipe!
     
  5. I loooove breakfast, but really felt this was very dry, like a lot of the other posters. It was easy to whip up, and if i try it again I will be adding a lot more moisture.

Tweaks

  1. Hubby particularly enjoyed this! I used a 4 ounce can of green chilies instead of the pepper, added a can of cream of mushroom soup, and about 3/4-1 cup of milk. I didn't find it to be real dry - it is a potato dish afterall, and I think that's what it tasted like. I usually need an extra beverage with a potato. We doused ours with ketchup, though we were longing for salsa to perfect this dish. Cook time was right on, even for my crockpot that seems to burn EVERYTHING. Thanks Mary!
