Ham and Mushroom Soup

This recipe is super simple and very tasty. Its from The Rookie Cook- Company's Coming cookbook. We usually double it for a family of four (2 adults and 2 preschoolers) everyone loves it. We serve with homemade bread or bisuits Easy Biscuits

• Prep Time: 5 mins
• Cook Time: 25 mins

Ingredients:

Serves: 2-4

Yield: 5.0 cups

• ½ medium onion , chopped
• 2 cups sliced fresh mushrooms
• 1 ½ teaspoons cooking oil
• 4 cups water
• 1 cup diced cooked ham (baked ham)
• ½ cup frozen mixed vegetables (optional)
• 1 tablespoon vegetable bouillon granules
• ½ teaspoon dried thyme
• ¼ teaspoon parsley flakes
• 1⁄8; teaspoon garlic powder
• 1⁄8; teaspoon celery seed
• ¼ teaspoon salt
• ¼ teaspoon pepper

Directions:

1. Saute onions and mushrooms in cooking oil in large saucepan on medium for about 5 minutes until onion is soft.
2. Add remaining 10 ingredients. Bring to a boil on medium-high.
3. Reduce heat. Cover.
4. Simmer for 20 minutes, stirring occasionally.
