Ham and Cheese Topped Chicken With Roasted Broccoli

"I was watching our local news one Sunday morning and a lady shared this recipe. It looked simple and delicious - and it was both! Just make sure your chicken breast aren't too thick (like mine were the first time I made it) or you will have to cook it longer, then the broccoli gets too well done. I also prefer using bread crumbs to top it."

  • Ajust rack to lower-middle position and preheat to 475 degrees. Brush a large rimmed baking sheet with 1 TBSP oil.
  • Toss the broccoli with the remaining 2 TBSP oil, sugar and salt and pepper to taste.
  • Pat the chicken dry with paper towels.
  • Season with salt and pepper.
  • Arrange on baking sheet.
  • Spread the mustard over the chicken then top each with a slice of ham and sprinkle with cheese.
  • Sprinkle the cracker crumbs over the cheese, pressing gently to adhere. Arrange broccoli around the edge of the pan.
  • Roast until chicken is cooked through and broccoli is well browned, about 25 minutes, covering with foil if the cracker crumbs brown too quickly.
  • Let stand 5 minutes before serving.
