Ham and Cheese Noodle Casserole

Ingredients Nutrition

  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 14 green pepper, chopped
  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 1 cup sour cream
  • 14 cup milk
  • salt and pepper
  • 1 12 cups grated mozzarella cheese
  • 3 cups diced cooked ham (work really well) or 3 cups cooked ham steaks (work really well)
  • 4 ounces wide or dumpling egg noodles, cooked and drained, *3 cups uncooked
  • 2 cups potato chips (crushed)


  1. Saute butter, onion and peppers.
  2. Mix soup, sour cream, milk, salt and pepper, cheese, ham and noodles.
  3. Mix ingredients together, pour into greased 13x9 pan or casserole dish.
  4. Put crushed potato chips on top.
  5. Bake at 350 until well heated and bubbling, about 35-40 minutes.
  6. *4 ounces medium noodles = 3 cups uncooked/dry noodles, and yields about 4 cups when cooked and drained.

I made this tonight for my family but changed up a couple of things. Used Penne Rigate instead of Egg Noodles, a little less sour cream (I ran out) and I also omitted the potato chips.... changed the cheese to cheddar and added some seasonings, but a fantastic base for a Wonderful meal. I made this for my family the other night. Thought it went together easily and quickly. I didn't add any additional salt because I figured the ham would add enough salt to the dish. My husband really liked it, I thought it was good too but just a little bland and I thought that maybe it needed a little more seasoning for my tastes. Thank you! (tagged for Think Pink '09)

Absolutely delicious! I just made this for dinner tonight and used up our leftover Easter ham. I used cheddar instead of mozzarella cheese though Im sure the mozzarealla is just as tasty. I think that some might find it a tad salty and I would suggest the low sodium soup as well for those who dont like a lot of salt. I could eat the whole pan myself! Will definitely make this a lot. Thanks for the great recipe!
