Ham and Broccoli Soup With Potato

This is a delicous soup for using your leftover ham, or I sometimes buy the already diced ham at my grocery store.

Used this as a base for a recipe and it was fabulous. I don't think the substitutions I made changed the recipe overall, so I will still rate it. I used frozen, shredded potatoes and broccoli florets. I used the kitchen shears to chop the broccoli into bite size pieces in the pot. My family doesn't care for velveeta, so I used about 8 ounces of cheddar, cubed. It is important to always mix some hot liquid with the flour to avoid lumps, so I did do that. Everyone thought the soup was fabulous. I did omit the ham and used vegetable stock to keep it vegetarian. Looking forward to having this again soon! Thanks for sharing!

  1. In a large soup pot, combine the potatoes and chicken broth. Bring to a boil. Reduce heat to medium; cover and cook 4 to 5 minutes or until potatoes are tender.
  2. Stir in the ham and broccoli and simmer for another 5 minutes. Mix the milk and flour together until blended. Add the milk to to pot and simmer for 15 minutes, stirring occasionally. Do not boil!
  3. Add cheese and cream cheese and stir until melted. Add salt and pepper to taste.
  4. Serve steaming bowls of soup garnishd with shredded cheese, sour cream and/or croutons.
