Great to prepare on a busy fall night.
- 2 tablespoons olive oil
- 1 tablespoon white wine vinegar
- 1 teaspoon Dijon mustard
- 1⁄2 teaspoon sugar
- coarse salt and pepper
- 4 medium carrots, coarsely grated
- 1⁄3 cup raisins
- In a medium bowl, whisk together oil, vinegar, mustard, and sugar; season with salt and pepper.
- Add carrots and raisins, and toss to combine.
