  • 1 teaspoon baking soda
  • 12 cup hot water
  • 14 cup vegetable oil
  • 3 cups sugar
  • 4 eggs, well beaten
  • 2 cups canned pumpkin
  • 14 - 12 1/4-1/2 teaspoon cardamom (cinnamon contains caffeine, I use cardamom because it is Scandinavian like my family history. use wh) or 1/4-1/2 teaspoon cinnamon (cinnamon contains caffeine, I use cardamom because it is Scandinavian like my family history. use wh)
  • 3 12 cups flour

  • Preheat oven to 350°F.
  • Grease 2 loaf pans or 3 medium size disposable gift pans or one large 11 1/2 inch size cast iron fry pan.
  • The fry pan makes it nice and crusty on the edges and bottom.
  • Dissolve baking soda and HOT water together; stir and set aside.
  • Mix together the following: oil, sugar, eggs, pumpkin; then add soda water into it.
  • Spices.
  • Flour 1/2 cup at a time until all is added stir in between.
  • Bake for 50-60 minutes until golden brown and done by toothpick test.

  3. This bread is AMAZING! Made for a brunch and it was raved about by everyone! Moist, light, and perfect flavor! I added toasted, lightly salted pumpkin seeds to the top right before baking for a nice presentation and flavor contrast

  5. This was pretty good bread. It needed some honey butter spread on it to make it excellent. It has a lovely orange color. I used 1/4 tsp each cinnamon and allspice. I'm afraid I probably won't make this again b/c I was spoiled by a lady who made the BEST pumpkin bread ever and she wouldn't give up the recipe (don't you hate that?) so I will continue my search.

  1. Fabulous bread! I substituted 1/2 tsp pumpkin pie spice for the spices listed because I couldn't decide which spice I wanted to use. The bread was very moist and didn't last very long at all!!

My family has a recipe heritage from Finland, Germany, Switzerland, and Italy. Also, I like to try new foods from all sorts of places, this is an american tradition. Some of my favorite recipes are from a Girl Scout cookbook. This is because I am a Girl Scout Leader. During the summer, for one week, I volunteer as Girl Scout program manager at our daycamp. I help manage crafts, songs, games, activities around a central theme. At the same daycamp I am the bus lady. I say things like" Sit down ,don't poke your neighbor." or "Who wants to vote on what song to sing?" I love it. Ok, now what else do I think is worth doing for fun? I like to garden in our yard. My all time favorite "cookbook" is a recipe box from my great grandma, grandma, and mother, in thier own handwriting. My second most favorite cookbook is Mrs. Beeton's all about cookery New Edition circa 1913. I am passionate about people, pets, children. i like attending and volunteering at native american pow wows, summer picnics and meetings. it is a good welcoming club. t native american thru daughter.happy to have learned few recipes there. If I had a month off no work, no responsibilities I would do arts and crafts and read books all night long sleeping in late each morning. I would go to museums in the afternoon, then to the library to get more books. I would cook and eat foods that I remember from my childhood.
