directions

  • Heat oven to 350°F Combine butter, sugar, egg and vanilla in large bowl. Beat at medium speed until well mixed. Reduce speed to low, add flour and coconut. Continue beating until well mixed.
  • Divide dough into 36 1 inch balls. Shape each ball into 2 1/4 inch long logs. Place 1 inch apart onto ungreased cookie sheets. Bake for 12 to 14 minutes or until set. Remove from cookie sheets. Cool completely.
  • Cut each fruit roll onto 3 pieces. Starting at top of each cookie, wrap 1 fruit roll piece around each cookie, stretching slightly to cover. Leave small opening near top for eyes. Place onto waxed paper. Use black decorator gel to adhere mini chocolate chips for eyes on each cookie. Store loosely covered container between sheets of waxed paper up to 2 days.
  • For making a Ghost, omit fruit roll. Roll each cookie in sifted powdered sugar while warm. Cool; roll each in powdered sugar again. Add eyes as directed.

<ul> <li>In the summer of 2009, my DH and I moved to McGrath, Alaska (on the Iditarod trail) to spend our first of many years there. We live a semi-primitive life, only electricity for appliances, no indoor plumbing and wood for heat.</li> <li>We live in a small village of around 300 people. We are off the road system and everything is flown in. There are 2 stores here but they are small and what is sold is around 2 times what it costs to buy it elsewhere. Many people buy their groceries in other parts of the state and mail it back. Game meat (moose and bear) and fish are very popular. I work part time at the local post office. Most of our meals are soups, stews and one pot. DH cooks dinner about half the time.</li> <li>I like to fish, pick berries, and of course cook. I like to volunteer to bake for the local school bake sales. I like to collect recipes for foods that I have a lot of and can easily get, hence fish, local berries and rhubarb are very popular items on my availability list. I don't have much of a knack for making up my own recipes, so this site has been wonderful as I used to stick to around a dozen different recipes. Before I got married, Top ramen and mac and cheese in a box were my usual foods.&nbsp;</li> <li>My life was different before I moved here. I had more time to cook, now I have very little free time and I cherish the little time I get to sit down.</li> </ul> <p>This life is not for every one, but it is simple and we are learning to live life and enjoy it. ( You don't move to Alaska for the weather)</p> <p><br /><img src=http://i224.photobucket.com/albums/dd235/MidwestMaven/banner.jpg alt= /><img src=http://i68.photobucket.com/albums/i25/bayhill/bswap11.jpg alt= />, <br />..................with***Mandy***...................with Carol AT <br /><img src=http://i120.photobucket.com/albums/o195/Lorrie61/holidaylinenswap07a.jpg alt= /><img src=http://i174.photobucket.com/albums/w115/bugh8er/St%20Pats/4811_68279.jpg border=0 alt=Photobucket /> <br />................. with Alskann...................with Becky in Wisconsin <br /><img src=http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/IWasAdoptedfall08.jpg border=0 alt=Photobucket /><img src=http://i76.photobucket.com/albums/j10/housedaughter/cswap.jpg border=0 alt=Photobucket /> <br /> .............Adopted by Trinkets.................with Jacqueline in Ky <br /><img src=http://i146.photobucket.com/albums/r271/copperhorse58/Zaar%20Food%20Photos/Food%20Photos%202008/herbspicesticker.jpg alt= />,with FrannieJ <br /> <img src=http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/adoptedspring08.jpg border=0 alt=Photobucket />, Adopted by Cindy J<img src=http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/honey-pot-print-c10069558.jpg border=0 alt=Photobucket /> with K9 Owned <br /><img src=http://i250.photobucket.com/albums/gg241/borealisbeegirl/ShoeboxSwap08BannerByUmSafia.jpg alt= /> <br />with Antifreesz <br /><img src=http://i275.photobucket.com/albums/jj294/QueenBee49444/CrazySwapBanner4.jpg border=0 alt=Photobucket /><img src=http://i146.photobucket.com/albums/r271/copperhorse58/Birthday%20and%20Celebration%20Images/spicesswap_amtag1.jpg border=0 alt=Photobucket /> <br /> Package sent to HokiesLady ....................with lazy gourmet <br />Received package from Amanda in OZ <br /><img src=http://i174.photobucket.com/albums/w115/bugh8er/food%20and%20swaps/Purple-Swap-AM-Banner.jpg border=0 alt=Photobucket />with Susiecat Too, <br /><img src=http://i250.photobucket.com/albums/gg271/MrsTeny/Permanent%20Collection/PACSpring09Iwasadopted.jpg alt= />................<img src=http://i250.photobucket.com/albums/gg271/MrsTeny/Permanent%20Collection/PACSpring09Participation.jpg alt= />, <br /> by FloridaNative.................I adopted Diann is Cooking</p>
