Hallie's Death by Chocolate Cookies

ingredients
- 1 1⁄3 cups self rising flour
- 1 cup white sugar
- 2 tablespoons light brown sugar (not necessary to pack)
- 1⁄4 cup dark cocoa
- 1⁄2 cup margarine or 1/2 cup butter, melted
- 3 tablespoons vanilla extract
- 1 large egg
- 1⁄2 cup flaked coconut (optional)
directions
- Preheat oven to 325º.
- Blend dry stuff together well, then add in margarine, vanilla, and egg.
- Stir well, then mix in coconut if using it.
- Drop by teaspoons onto an ungreased cookie sheet, and bake for ten minutes (you want the tops to come out a bit gooey).
- Cool and enjoy!

Lovely, delicious chocolate cookies, crispy on the edges and a little soft in the middle. I skipped the coconut and added some chocolate chips instead. The dough for this is very easy to work with, I rolled it into little balls the size of chocolates (the dough was very dark and glossy so they looked a little like chocolates too) and baked for about 9 minutes each. I got 3 pans of 16 cookies each. Yummy, thanks for posting.

Wait, you might want to know a little about me first, huh? Well, I'm twenty six, and I work with the developmentally disabled population. I'm also an artist (or at least an enthusiastic untalented hack), a writer, and a musician. I'm a stereotypical Sagittarian, which means whatever crosses my mind is coming out of my mouth. I live in the beautiful Blue Ridge Mountains of North Carolina, very close to the Blue Ridge Parkway. I share this idyllic home with my mom, who was kind enough to let me move back in when I lost everything, and my dog Chester. It's a simple, rather plain existance, but I like it.
I also share much of my time, and all of my heart, with a man named Haytham. We haven't been together long, but I can say he's one of the best things that's ever happened to me, and well, I'm pretty happy with that situation.
