Halibut with Citrus-Dijon Sauce

  1. Arrange fish in a large shallow baking dish.
  2. Combine orange juice and next 5 ingredients in a small bowl and mix well.
  3. Pour over fish steaks, cover and marinate in refrigerator for 1 hour, turning once.
  4. Remove steaks from marinade and reserve marinade.
  5. Combine reserved marinade, olive oil and mustard in small saucepan and bring to boil.
  6. Add onion, capers and parsley and reduce heat to simmer for 5 minutes.
  7. Place halibut steaks on broiler pan sprayed with nonstick cooking spray and brush with sauce.
  8. Broil for 5 minutes.
  9. Turn, brush with sauce and broil an additional 3 minutes or until fish flakes easily with fork.
  10. Spoon remaining sauce over fish or serve on the side.

When I decided to prepare this recipe, I didn't have time to marinate the halibut for an hour, so I baked the fish with the sauce over the top. This turned out absolutely fantastic! I recommend this alternative to the broiled method.

Really easy to make and it got rave reviews! I'll add a little more OJ next time and cut the dijon a tad, but overall this is a very nice recipe! Thanks!

This is a definate keeper. We did it with mahi-mahi. The flavor combinations should work with most firm fleshed fish [it would over-power anything that has a delicate flavor]. I did it on the grill [5 minutes per side]. I marinated for about 4 hours which only seemed to improve the flavor.
