Halibut and Bean Stew

- 4 bacon, slices chopped
- 1 cup shallot, sliced
- 3 tablespoons olive oil
- 6 garlic cloves, chopped
- 1 (14 1/2 ounce) can tomatoes, diced
- 1 (8 ounce) bottle clam juice
- 1⁄2 cup white wine
- 1⁄2 teaspoon saffron thread
- 2 (15 ounce) cans white beans, drained
- 1 1⁄2 lbs halibut fillets, cut into chunks
directions
- In a large pot over medium high heat saute the bacon and shallots until bacon is crisp (5-10 minutes).
- Stir in olive oil and garlic and cook stirring another minute or so.
- Stir in tomatoes, wine and saffron and bring to a boil. Reduce heat and simmer for 5 minutes.
- Stir in beans and fish and bring stew to a simmer. Cover; and simmer until fish is done (5 minutes).
- Season with salt and pepper.

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes.
