    Half-Moon Bay Poached Plums

    Prep Time: 15 mins

    Total Time: 30 mins

    1. 1 Peel the plums and slice in half. Place the plums in lemon water and set aside.
    2. 2 Combine wine, sugar, cinnamon stick, cloves, orange juice, lemon juice, orange zest and lemon zest into a shallow brazing pan. Bring the wine to a full boil and reduce to a slow simmer. Place a sheet of baker's paper over the pan.
    3. 3 Simmer for 15-20 minutes or until the plums are tender. Remove the plums with a slotted spoon and hold warm for service.
    4. 4 Strain the wine sauce and return to the brazing pan. Bring the sauce to a boil and reduce the sauce by half.
    5. 5 In a small bowl wisk the cornstarch into the cold water. Slowly wisk the cornstarch into the wine sauce. Stir for 3-4 minutes and remove the sauce. Hold the sauce warm.
    6. 6 SERVICE:.
    7. 7 Place the warm pulms on a chilled plate. Dizzle the wine sauce over the plums.
    8. 8 GARNISH: Fresh Red Raspberries, Fresh Strawberries and Whipping Cream.

    Plums have a smooth skin and come in a variety of colors. The Red Beaut is a medium in size and is mildly sweet. The Half-Moon Bay Orange Muscat Wine will infuse the flavor of the plums as they are slowly poached. The Plums are very easy to make and can be served for any type of meal. The plums can be made a day ahead of time
