Simple, and good
- 1 lb haddock
- 1 dash salt
- 1⁄4 cup monterey jack cheese, shredded
- 1⁄4 cup cheddar cheese, shredded
- 2 tablespoons butter
- 1 1⁄2 cups crushed Ritz crackers
- Place haddock in casserole dish. Season with salt. Top with grated cheese's. Melt butter; toss with cracker crumbs. Spread cracker mix over the cheese-topped fish. Bake approximately 25 minutes at 350'.
I like this recipe but it needs something. I think the lack might have something to do with the Ritz crackers. Almost all cracker and cookie products have been reformulated in the past couple of years to reduce salt and eliminate transfats. I have not bought Ritz crackers for a long time until this recipe called for them, and they don't taste the same as they used to. I suspect they have less salt and they seem drier - probably the reduced fat. To compensate, I would suggest adding a bit more salt to the fish and maybe using a little more butter than the recipe calls for. When I try it again I will probably add a little seasoning as well - perhaps Mrs Dash or something. Otherwise it's a really good and fast recipe for a workday dinner.
