I have never tried this, but plan to make them when a lunchtime occasion arises involving feeding six people. Looks interesting.

Directions

  1. Toast 6 slices rye bread, spread each slice with hot mustard.
  2. On each slice of toast, arrange 2 slices orange, 1 slice salami, 2 slices beets, 1 slice brick chhese, 2 slices onion and 1 slice Cheddar cheese.
  3. Arrange 2 anchovies diagonally on top of cheese.
  4. Butter remaining bread slices and sprinkle with Parmesan cheese. Arrange all bread slices on baking sheet; open-faced, and broil until cheese melts slightly; remove and slice in half diagonally.
  5. Arrange on serving plates, placing Parmesan slices on each side of anchovy slice.
  6. Garnish with gherkins.
