Guiltless Fruit & Cookie Parfait

"This dessert has a wonderful blend of sweet, tart and creamy and is made with fat-free yogurt, cool whip, cookies, strawberry JELL-O and strawberries. It is utterly guiltless and bright pink color is delightful! This is a slightly modified recipe from kraftfoods.com. I use Recipe #240945 for the fat-free cookies (gluten free!) but don't refrigerate the dough so they come out softer. Feel free to use reduced fat Oreos or other cookies and have fun trying different types of fruit, gelatin and yogurt!"

  • Mix together yogurt and gelatin, then fold in cool whip (carefully mixing together completely).
  • Layer the yogurt mixture, cookies (crumble into bite sized pieces if not soft) and fruit in four dessert glasses however you like and garnish with a sprig of mint, or you can follow my suggestion below!
  • LAYERING SUGGESTION: Divide half of the yogurt mixture between the four glasses, then top with 1 cookie and 1/4 cup of the sliced strawberries, then repeat using 2 cookies, then top with a dollup of the yogurt mixture and garnish with a mint leaf.

  1. My husband wanted a cherry pie, but did not want the calories. So, I made the Guiltless Fruit & Cookie Parfait using sugar free cherry jello instead of strawberry. I made the Sin-Free Chocolate Chews for the cookies and put strawberries and blueberries in the layers. Then to top it off I put 5 fresh cherries with the stems still attached. I also put a small star of cool whip on top of the strawberries on the top and put a blue berry in the center (if my photo is approved and loaded, you will be able to see the top view which shows this off). I believe my DH would have wanted me to give this 6 stars, if that was an option. He loved it!

Growing up, my mom didn't keep any junk food in the house so if I wanted something sweet I had to find a way to make it (or go to a friend's house)! I loved looking through my mom's recipe books and trying to find recipes that I could make. I baked a lot of home made bread from Betty Crocker's Big Red Book, and every holiday, my mom and I would make pies together from scratch. I didn't actually get interested in cooking main courses until I got married and realized that I had to actually put dinner on the table every night. Just as I was starting to get the hang of it, I was diagnosed with Celiac Disease in May of 2007. This meant that I had to learn a whole new way of cooking - gluten free. I have accepted this as a new challenge and have fallen even more in love with cooking and baking. There is nothing like the feeling I get when I have success with creating a new recipe! My inspiration usually comes from a craving for something that I can't have because it is not gluten free. I immediately go back to my kitchen and learn how to make it myself! I also focus on creating recipes with all natural ingredients and avoiding artificial or added sugars.
