An island treat! A simple and not too sweet cake I found off of justfruitrecipes.com and decided to post it here for ZWT5. Hope you enjoy it!
- 177.48 ml butter
- 236.59 ml sugar
- 473.18 ml flour
- 2 eggs
- 4.92 ml baking powder
- 4.92 ml vanilla extract
- 283.49 g guava paste
- Preheat oven to 350°F.
- Cream butter and add sugar little by little.
- Add eggs one at a time, followed by the vanilla.
- Sieve flour and baking powder and mix in to the butter eggs and sugar.
- Pour half the batter on a greased mold.
- Place the guava paste (cut in slices) so as to cover all the batter.
- Pour the rest of the batter and bake for 45-60 min, or until an inserted toothpick comes out clean.
The batter for this was really thick, almost like cookie dough. The cake comes out nice and moist (not to mention deslicious) with the top almost crunchy cookie-like. The guava is divine. I made this in a loaf pan and it is more like 8 servings, unless you are a piggie like me!
I have made this several times, using an 8x8 square pan. It is more like a big jelly-filled cookie than a cake, but delicious! It is sometimes a little difficult to spread the thick batter in the oiled pan, but a wet spatula helps. Here's a variation you may like to try to make the cake look prettier. If you have some shaped vegetable cutters, cut a slice of extra guava paste and cut out little shapes. Push them into the top layer of the batter.
This was the best ever! I am once again baking it for company today. I am adding a layer of puerto Rican white cheese on top of the guava. Can't wait to see how it turns out. Wonderful recipe. Thanks.
