This is an interesting tomato free salsa I found in the 'World Cafe 2' cookbook which celebrates vegetarian recipes from around the world.
- 4 medium carrots, grated
- 1 large red onion, cubed
- 2 garlic cloves, crushed
- 2 red chilies, roughly chopped
- 1⁄2 cup fresh cilantro, chopped
- 2 limes, juice of
- salt, to taste
- 3 teaspoons olive oil
- Place all the ingredients in a food processor and blend until smooth.
- Chill in the fridge until required.
Tasted pretty good but I'd recommend putting less onion and cilantro in it! It tastes better than it looks!! Enjoy!
I made half a batch because I just can't seem to keep limes around here lately. Who is eating them?! lol! I really liked this salsa and I'm sure I'll be making it again. Thanks! Reviewed for the Veg*n Recipe Swap.
It's "OK"..... tasted far better than it looks..... I needed to add extra lime juice.
