Being a military family we get the pleasure of meeting people from all over the world. My girlfriend who lives in Guam gave me this recipe. So that I don't misplace it I'm putting it into my cookbook for later use.

Ingredients Nutrition

  • 2 tablespoons achiote seeds
  • 12 teaspoon salt
  • 2 tablespoons cooking oil
  • 12 cup chopped onion
  • 2 cups water
  • 2 cups rice


  1. Soak achiote seeds in 1/2 cup warm water for 30 minutes. Add salt. Using a spoon press the achiote seeds to get color. Strain liquid into a pot big enough to hold all the ingredients, bring to a boil.
  2. Saute onions in oil.
  3. Add rinsed rice to the boiling achiote colored water. Reduce heat to medium-high for five minutes or until water evaporates. Reduce heat to low, coer pot and cook for 15 more minutes.

I love Guamanian food. My Husband (Air Force) and I got to live on Guam for only 2 years. We absolutely loved it. The seeds can also be called annatto seeds. It's the same thing

We lived in Guam for 7 years as a military family and our children love red rice. We are going to attempt to serve the dish at our 20th Wedding Anniversary to share with our family and friends.
