  1. Put all the ingredients, except the cilantro, into a food processor and pulse it until the ingredients becomes fairly smooth.
  2. Spoon into a decorative bowl or shallow dish lined with leaf lettuce.
  3. Sprinkle the cilantro on top and decorate with lemon and tomato wedges and serve.
