ingredients
- 2 medium Hass avocadoes, pitted and sliced
- 2 medium tomatoes, seeded and chopped
- 1⁄2 English cucumber, chopped
- 1⁄2 red onion, sliced
- 1 jalapeno, seeded and finely chopped
- 3 tablespoons lemon juice
- 1 small garlic clove, chopped
- 1 teaspoon salt
- 1⁄3 cup extra virgin olive oil
- 2 drops hot sauce (to taste)
directions
- Arrange vegetables on a platter.
- Mix lemon, garlic, hot sauce and salt. Stream in olive oil while whisking dressing.
- Pour lemon dressing over the salad and serve.

Russ and I both really enjoyed this quick, simple, tasty salad. I made a half recipe, but onlu used a tablespoon of lemon juice and 2 teaspoons of olive oil in the dressing. It was tangy (just as we love a salsa style dish) and seemed like more than enough dressing. I scattered a bit of chopped fresh coriander (cilantro) over the finished salad.

When making this for my other half, I cut the recipe in half, since I'm really not into avocado! Also made a couple of adjustments, in that I used only 1/4 of a jalapeno & then just the slightest hint of a drop of hot sauce! Apparently it was just great, 'cause he was all over the place with complements, & that, of course, makes me happy! [Made & reviewed in 1-2-3 Hits recipe tag]

Avocado's you say?...and cucumber's too? Why this is like gold, but don't say,"BOO!" So easy, so pleasy, so much so you will have nothing to do, but grab your knife and don't have strife. Followed exactly, even adding a bit more then 1 drop of hot sauce, could of eaten this all day long long, but it became night, and had no more tomatoes. Will make again very, very soon! Enjoy!
