These are great for a snack and very addictive. For a lower fat alternative, try cutting the potatoes in half, brushing them in a little olive oil and baking in the oven until crispy.
Directions:
1
Cook the potatoes in boiling, salted water for about 10 minutes.
2
Drain and let cool.
3
Meanwhile, roughly chop the avocadoes and put in a bowl with the juice of one lime.
4
Mash with a fork and then add in the tomatoes, onion, peppers, garlic and coriander.
5
Season with some salt and pepper, to taste.
6
You now have guacamole.
7
Squeeze some juice from the second lime over the top of the guacamole and cover the bowl tightly with clingfilm to stop it turning black.
8
Split the new potatoes in half and then deep fry them in batches until really crusty.
9
Drain on paper towel, then season them with salt and put in a serving bowl.
10
Serve the hot potatoes with the zesty guacamole for dipping.
Ratings & Reviews:
These are great! I've had potato skins with cheese and guacamole before, but I think these are better! Why eat only the skins, when you can have the whole potato? :) The guacamole was very tasty too, the seasonings were perfect! I did add a couple of drops of tabasco too, but the cilantro is what makes it great! Thanks SG! :)
