Guacamole Muy Facil

"I don't like guacamole to compete with the other dishes when preparing a Mexican feast. My tamales, beans, rice, etc. don't like the competition if the guacamole has too many ingredients; trying to steal the limelight. This is a condiment that I can throw together with very few ingredients, substituting as necessary. No chunky guacamole for me, this is creamy, delicious and simple!"

  • *Note: My husband however insists on using homemade mayonnaise when he prepares guacamole. I felt obligated to point that out.
  • In serving bowl, juice the lime.
  • Scoop the avocado into the bowl with the lime and lightly mash the ingredients together to stop the avocados from turning brown.
  • Next add the salt, a few dashes of pepper and the sour cream, mashing the avocado mixture with fork until very smooth. Adjust seasoning and add more lime juice if necessary.
  • Cover bowl well and refrigerate at least one hour.
  • Guacamole is best eaten within a day. Leftover guacamole doesn't exist in our household.
  • Yield: approximately 1 cup.

  4. Smooth, cool and creamy.....and simple! I used the lowfat sour cream and the lime juice. I also added a bit of chopped cilantro. This is great with quesadillas or any Mexican meal, but also has endless possibilities. Tastes great as a baked potato topper or as a sandwich/wrap spread instead of mayo. Thanx for a versatile guacamole recipe. I'll whip this up often.

  1. I saw your promotion in CC and decided to give in to my guac cravings and try this for lunch. Hey! It's my birthday! I can eat anything I want for lunch, right? LOL I do like a chunky guac and didn't blend this to the smoothy goodness suggested. I also like the onions, peppers and tomatoes of traditional guac, and worried that I would miss them. Therefore, I subbed cayenne pepper for the fresh ground black pepper to up the kick just a bit. I used the plain nonfat yogurt option, and found it lent a good flavor to the mix. This was indeed muy facil and such a simple treat.
