guacamole is not just for dipping anymore
- 1 Hass avocado, cut into 3/8-inch cubes
- 1⁄3 cup finely chopped onion
- 1⁄3 cup chopped tomato
- 1 teaspoon chopped jalapeno, seeded (optional)
- 3 tablespoons chopped fresh cilantro
- 1 tablespoon fresh lime juice
- 1 tablespoon olive oil
- salt and pepper
- combine all ingredients in a bowl, and mix gently.
- serve immediately or cover and store in the fridge for up to 2 days.
